This full-size false bottom is constructed of stainless steel. It’s 90-degree bent edges stand off the bottom of the pan. The top surface’s perforated drain holes prevent ingredients put into the pan from getting soggy or saturated by draining juices or oils into the pan underneath the false bottom. It is NSF certified for food service applications.
